Objective:In the postmenopausal period, most women suffer vasomotor symptoms (VMS). It is well-known that VMS can worsen the quality of life. Stabilization of a nutraceutical omega-3 fatty acid by encapsulation in ultrathin electrosprayed zein prolamine.

Docosahexaenoic acid (DHA) is a long chain polyunsaturated fatty acid of the omega-3 series (omega-3), which exerts strong positive influences on human health. The target of this study was the stabilization by encapsulation of this bioactive ingredient in zein ultrathin capsules produced by electrospraying. The zein ultrathin DHA encapsulation was observed by ATR-FTIR spectroscopy to be more efficient against degradation under both ambient conditions and in a confined space (so-called headspace experiment). Adequate concentrations of omega 3 fatty acids (FA) may be maintained by consuming foods naturally rich in or functional foods enriched with those essential FA. We assessed the effects of an 8-week consumption of milk enriched with 400. mg of omega 3 FA on blood lipid levels and selected cardiovascular risk factors in adult healthy volunteers. High Yields of Shrimp Oil Rich in Omega-3 and Natural Astaxanthin from Shrimp Waste

A valued marine oil rich in omega-3 lipids and natural astaxanthin is obtained with remarkably high yield (up to S wt %) extending to pink shrimp waste (head and carapace) using the approach to extract fish oil from fish processing byproducts using D-limonene. Biobased limonene is an excellent solvent for both unsaturated lipids and astaxanthin-based carotenoids preventing oxidative degradation during the extraction cycle including solvent separation at 85 degrees C. Explaining the deep red color of the shrimp oil obtained, computational simulation suggests that D-limonene is also a good solvent for natural astaxanthin abundant in shrimp.

Zivju eļļu uztura bagātinātāju popularitāte arvien pieaug to veselības ieguvumu dēļ, pateicoties eikozapentaēnskābei (EPS) un dokozaheksaēnskābei (DHS). Tā ir laba alternatīva, ja uzturā netiek lietotas zivis. Tomēr polinepiesātinātās taukskābes ir viegli oksidējamas un ir bažas par to iespējamo negatīvo efektu. Maģistra darba mērķis bija izpētīt Latvijas aptiekās pieejamo zivju eļļu uzturu bagātinātāju primārās oksidācijas līmeni un cenu diapazonu.
